Lettuce (Lactuca sativa), either annual or biennial, grows between 12cm and 33cm tall and originates from the Mediterranean region. It thrives in open lands with full sun or half shade, requiring fresh, fertile soil that drains well. As a warm to temperate, cold-resistant plant, lettuce has a long history dating back at least 4500 years when it was consumed as food throughout the Mediterranean basin. The name 'Lactuca' is derived from Latin, referring to the milky white juice within the plant which contains mild opiate-like properties that were known and utilized by Romans and Egyptians for inducing sleep after meals. This nutrient-dense crop, rich in minerals with pigmented varieties also providing antioxidants, holds significant importance in European agriculture but is a minor crop in the United States, primarily produced in California across approximately 78,000 acres annually.
