The artichoke (Cynara scolymus) is a perennial plant that grows from 34 to 97 cm tall and originates from Mediterranean regions. To thrive, this warm-loving, moderately humid plant requires well-fertilized soil in full sun and regular irrigation. Unfortunately, it cannot withstand freezing frost. As one of the world's oldest cultivated vegetables, its name comes from Arabic 'ardi shauk,' which translates to ground thorn. This term evolved into the Italian word 'articiocco,' which is the root of artichoke in all Western languages. Caterina de Medici brought it to France, and it spread worldwide. Besides being a delicious vegetable, artichokes have significant medicinal properties, particularly as liver protectors. Today, they are widely cultivated in other warm areas, such as California, where it is a major crop.
