I created this project for a small assignment using a Teensy 2.0 board and an M-Audio foot pedal, allowing me to use it as a push-to-talk device in games or on Discord. The foot pedal utilizes a standard 1/4" jack and functions as a digital switch on the Teensy board, sending a joystick button press when held down. I opted for these 1/4" jacks: https://amzn.to/2CYoupq. The Teensy 2.0 boasts 25 digital inputs, enabling me to easily build a larger box with multiple inputs. I encountered several cheap USB foot pedals on Amazon that wouldn't meet my requirements. The one I purchased would only register a single key press when held down, falling short of my expectations.
