Here is a freshwater fish known for its firm-fleshed meat and distinct taste: The sturgeon's rough scales can be silver-gray to black in color, but their white belly provides clear visibility beneath water. Despite being air-breathing like all fish, these aquatic mammals often live their entire lives under water except during mating rituals or when escaping danger by rising rapidly upwards in order to gasp some air quickly. They possess bony plates called scutes running along both sides of the sturgeon's long body, as well as numerous sharp fins allowing for fast movements throughout open water and among plants. Due to being relatively small, a mature male sturgeon is approximately 1 foot 7 inches (50 cm) in length. These ancient animals belong to an archaic family thought to be related primarily with the extinct genus Psephodus that existed about one hundred forty five million years ago when many large dinosaurs walked on land alongside various giant aquatic predators during the Jurassic Period
