I've tried changing the hotbed of the Anet AM8 to a 300x300 one while keeping the original structure of the Anet AM8 (same profiles), so I only gain a little more printing surface on the Y axis and slightly more on the X axis, which is approximately 260mm. To get a real improvement, you need to change the length of the two aluminum profiles on the Y axis by at least 160 mm to take advantage of the extra 300mm of the new hotbed (you'll also need to increase the rods by the same amount). Also, note that if you don't change the firmware of the original board, you won't be able to use this extra surface. The bed is a bit tight (about 5mm on each side) but it works fine. Using the same Y axis rods (8mm thick), I had to modify the mounting pieces to fit the original DruckiMCDruck motor support, https://www.thingiverse.com/thing:2970681/files (named motor-bracket-v1.STL), which are 6mm taller than the originals from pheneeny, https://www.thingiverse.com/thing:2263216/files. The same goes for the rod end stop holder that comes with the DruckiMCDruck support, uses the same 5x10 screws as the original. I also had to reduce the Y axis belt tensioner (only one piece) and you can download the other one from the designer's original file on Thingiverse, https://www.thingiverse.com/thing:2970681/files (named belt-tensioner-v1). I've also modified the piece that holds the Y axis belt to the hotbed, making it a bit longer and adding a screw with a nut to apply some pressure without overdoing it. Finally, I moved the display to the top of the printer since it kept getting in the way of the Y axis tensioner.
