Hi Guys, After an attempt with bearings, I decided to fix this Problem with stucking filament in the sensor. When my printer got delivered to me there were a 30-40cm tube for filament there. It is used in the extruder and is maybe a generous sparing tube. However.. I used this finally force the filament to go straight vertically into the sensor without scraping all the time at the messing parts of the sensor. Also by going out of the sensor. If you also got this sparing filament tube with your printer, this part is might a quick (and at least for me most working) fix for the scraping filament problem at the CR-10 V3. Please flip the stl file before printing. As this is a flat and wide object, you should also consider printing it with a bit more bed heat. ( I printed PLA with 64°C bed temperature). You might also consider to adjust the plate til the filament goes smoothly before tighting the screws.
