I recently acquired a screen for my older seat because I frequently drive long distances now, so after researching available options, it seemed like a RPI 3 with a 7 inch touchscreen running crankshaft was the ideal solution. Unfortunately, I couldn't find a mount that fit perfectly, as all of them were too thick to accommodate the PI. To overcome this issue, I attempted to modify an existing design to allow for upside-down mounting of the pi, and it seemed like it would work on paper! I created a detailed model using Inventor with RPI and 7inch touchscreen models to test everything's fit and this is what I ended up with. The design has been adjusted to meet my specific needs, but if someone wants stp or ipt versions to modify the design for their own specifications, feel free to message me and I'll add them to the thing.
