upright bamboo skewer knife blocks are pretty cool but I never have quite enough dedicated space in my kitchen for a knife block so I applied the same principle to a hanging knife block.
Its angled 15° so knifes are securely retained.

Using wooden skewers should in theory create an environment that's not friendly for microbial growth. The moisture needed for survival will get sucked away in the woods fibers by capillary action. Regardless I don't condone sticking your wet and/or dirty knifes in there.
On the other hand this sure does look like a insect hotel, so I encourage you to periodically check for moths etc.

Print right-side-up using the tallest layerheight your printer can manage. Mine are 2 perimeters total with a 0.6mm nozzle and 0.35 layerheight and feel plenty strong. The model is parametric so simply adjust the length as needed (see Fusion360 screenshot). Alternatively for simplicity's sake I included 150, 180 and 200mm variants.
parametric: length (100+mm), width (40+mm) , height, shell-thickness.

The included 50mm x 70mm model required about 250 skewers.

Additionally I included a 115mm model that is suitable to be used as a pretzel-stick dispenser for under desk mounting. Most pretzel sticks are 125mm long so that leaves you with 10mm unrestricted access for fast draws!

As far as screws go its designed to take any 3mm (~1/8") countersunk screw. The screw sits about 5mm deep in the knife block, not including the head.
