Welcome to the planet Pan Gallego in the constellation Via Culinaria. Joking aside, pan gallego is a key element in Galician cuisine. It's distinctive for its exquisite combination of sponge-like crumb with hard and crunchy crust. Its production requires the use of a sourdough starter along with a large amount of water and yeast. It also needs a long fermentation period of at least three hours, followed by baking in an oven with a stone hearth.
