Nitro! The main goal of NOS is to increase oxygen levels in the cylinders to boost combustion efficiency. By sending more air (and thus oxygen), the forces transmitted to the pistons will be greater (more pressure). To achieve this, we store nitrous oxide (liquid) in a tank. This liquid is essentially a "juice" composed of molecules made up of one oxygen atom and two nitrogen atoms (N2: nitrogen / O: oxygen). The liquid is then injected into the air intake in its liquid form (small droplets) to mix with the air. Once it reaches the combustion chamber through the intake valve, the nitrous oxide will undergo a chemical transformation due to the high temperatures and pressures. And that's where NOS becomes usable because that's when the oxygen atom is released from the nitrogen atoms it was attached to. We have more oxygen in the combustion chamber, so we can burn more fuel (more combustant = more fuel to burn). The icing on the cake is that nitrogen helps the engine lose temperature during combustion, further improving its efficiency... (Source: Fiches-Autos.fr)
