I have recreated the MintyBoost v3.0 with a single-sided PCB. Since I am not proficient in Eagle, I used Fritzing to redraw Adafruit's circuit schematic and design the board. The parts list is available on Adafruit's website (http://learn.adafruit.com/minty-boost/parts-list). I successfully tested it with a Samsung GS3, charging it from 5% to full in just 20 minutes. I am yet to try it on an Apple device.
