This is a jig for holding aliexpress diamond plates for sharpening in the same way the sharpmaker holds ceramic stones. It allows you to hold a known bevel angle by holding the knife vertically and siding down the diamond plate. These plates are the cheapest, most compact, and in many respects highest performance sharpening stones you can get, and work well with this kind of jig. Oversimplified instructions: Choose your desired secondary bevel angle, put a coarse plate in, grind until you reach a burr on both sides. Switch to fine plate on 30 degrees and do light edge leading strokes until the burr is gone and the edge is respectably sharp (1-2 passes, usually). Move the fine plate to one step higher than the secondary bevel, and do about 5x as many passes as it took to remove the burr, or until the edge catches at the sharpening angle instead of 30 degrees.
