Simple models of four cogs and one hulk suitable for the medieval and early modern period. 1/1200 scaled. Without masts and sails. Sorry. Making masts might be possible with a suitable wooden stick (perhaps toothpicks, matches, wooden skewers for food etc). Sails can be made out of paper. Might even be possible to make rigging out of thin thread.
