When purchasing pork or beef, it's essential to allow the meat time to relax in a cool, dark, and dry environment. Failing to do so will result in a texture similar to that of hardened shoes. The issue lies with the dry aspect, as meat is comprised of a substantial amount of water and blood that must be released during this period. This brief rest enables you to store the meat safely in your refrigerator for several days - typically 5-7 days for pork and 14 days for beef - while maintaining its dryness. Note: Version two has been revised following my wife's suggestion regarding cleanliness.
