Salo, a traditional Slavic dish, consists of fatback slabs cured with salt or brine. Named differently in various countries, it may be seasoned with paprika in East Slavic regions or smoked in the South Slavic area. Translated as bacon or lard in English, salo differs from lard as it is not rendered and from bacon as it has minimal lean meat. Its similarity to Italian lardo lies in thickness of cut and seasoning; East Slavic salo uses salt, garlic, black pepper, and coriander while lardo relies on rosemary and other herbs for flavoring.
