An archaeological excavation carried out between William Street, Young Street, Ottawa Street and Murray Street as part of preparatory work for the construction of Pavilion F at ÉTS made possible the discovery of a combustion chamber associated with the bakery Gallery, in operation at the turn of the 20th century. The project consisted of a rectangular two-level combustion chamber (1) that widened upward into an eaves opening in narrow steps (2). Above this opening were once bread ovens. The upper level of the combustion chamber served to accommodate fuel. Fuel was fed to the fireplace through the facade opening on the east side, which was located at the basement of the bakery. The lower level served to collect combustible waste. To the north of the oven, another brick structure (3) was uncovered. The inner facades were also formed by refractory bricks. Further research will be needed for its identification.
