Knife sharpeners set their angles between 10 and 30 degrees in precise increments of five. Some even go as low as ten degrees for razor-sharp blades. For kitchen knives, the ideal range is between 15 and 20 degrees. Pocket knives require a slightly wider angle, from 15 to 25 degrees. Anything above 30 degrees is best suited for hatchets and axes. The blocks themselves feature a groove where rubber bands can be secured to hold them firmly in place on the sharpening stone. Simply snap off the desired angle from the pre-cut strip.
