They are made for thin cookies, which we prefer here. If you wanna use them for thicker cookie, scale them in the Z axis only to have a higher cookie cutter. Concerning food safety issues: We all know that fdm printing is not the best thing for food safe products. Some will say they don't care, some others will. I have found that a cling wrap over the cookie dough (before pressing the cutter down) will keep your cookie cutters clean and will prevent any contamination.
