Gingerbread is a diverse category of sweet baked goods flavored with spices like ginger, cloves, nutmeg or cinnamon and sweetened using honey, sugar or molasses. Ranging from soft, moist loaf cakes to ginger biscuit-like textures, its origins trace back to 992 CE when Armenian monk Gregory of Nicopolis introduced it in France after seven years of teaching the French Christians how to bake it. By the 13th century, gingerbread had made its way to Sweden courtesy of German immigrants. In medieval Germany, gingerbread production was controlled by a guild and Swedish nuns from Vadstena Abbey were known to bake gingerbread as early as 1444 to aid digestion. In the 17th century, gingerbread biscuits began trading and were sold in monasteries, pharmacies and farmers' markets in town squares. In England, gingerbread was believed to have medicinal properties. The town of Market Drayton in Shropshire became known for its gingerbread in the 18th century with molasses becoming a common ingredient after settling in America. Amelia Simmons' 1796 American Cookery book contained seven different recipes for gingerbread, making it widely available. Gingerbread came to the Americas with European settlers and was soon flavored with cheaper molasses, producing softer cakes.
