I created a precise (within 0.1mm) replica of the brake pedal's main brackets, using 1.6mm steel electrogalvanized load cell mounting brackets with three adjustable firmness settings. For the load cells, I used these ones: https://www.aliexpress.com/item/The-strain-gauge-pressure-sensor-for-high-precision-resistor-load-cell-electronic-scale-sensor-10KG-20KG/1192622835.html. The rubber bung was sourced from the local hardware store's plumbing department (https://www.mitre10.co.nz/shop/plumb-it-rubber-shower-bung-15mm-black/p/289389), with an identical sized, potentially cheaper option available at http://www.labwarehouse.co.nz/Bung--B175mm-T225mm-H23mm-_p_1612.html. The cantilever beam was made from aluminum scrap, although the specific grade is unknown. Shims were adjusted to ensure the cantilever bottomed out against the load cell at its maximum rated load to prevent overloading. The mounting screws' heads were turned down to 10mm for increased pedal throw in the softest position. However, the tapped mounting holes on the received load cells may require adjustment or enlargement to fit your particular load cells. Lastly, the circuit used an INA122PA with the ref hooked up to the positive terminal and the load cell inputs reversed for output direction consistency with the original Logitech potentiometer.
