Here's my go-to setup for backcountry fishing. It starts with a pen fishing rod that gets modified to fit spincast reels. The spin casting reels are super easy to use, making them ideal for learning how to cast. Pen Rod - I'm a big fan of the rods from GoFastAndLight.com (they've always delivered great service). If you're outside the US just search for "Pen Fishing Rod" and you'll find other sellers.
