Sorbetes is the classic variation of ice cream made in the Philippines, often derided as "dirty ice cream", but distinct from its similarly named counterpart sorbet. Peddled by street vendors, it's typically served in small wafer or sugar cones and more recently, bread buns. Made uniquely with either coconut milk or regular milk, this treat is a staple of Filipino culture. Unlike American ice cream made with cow's milk, using the milk of the carabao, a type of water buffalo, resulted in a cheaper product known as "sorbetes". Both types of milk are widely used today.
