More creative ideas flowing this weekend. I sat down and crafted multiple spinning devices. This one utilizes (3) 1/2" nuts and a single 608 bearing. I engineered this one to be 9mm high, allowing the 1/2" nut to protrude about 2mm. The 608 bearing is only 7mm high, so you can recess it by hand once you get your covers in place. You can force or hammer the 1/2" nut in 1mm if it really bothers you. I will upload images when I get this one printed.
