I took the interior filling/circular area from @Oggie's very well-done dumpling press, scaled it out to make smaller edges and more space for filling in the center. I'm giving credit where credit is due - thanks Oggie! My dumplings didn't turn out great this time around, but that's okay, I'll do better next time.
