We've crafted a tool to manufacture "tea cookies" as locals call them in Sweden, known as crumpets by the English-speaking crowd! Cut out the dough using the circular tool and mark with small dots right before baking. Recipe for 8-10 Crumpets: • 100g of salted baking butter ( ordinary butter works too) • 5dl milk • 50g of baking yeast • 2 tablespoons of simple syrup ( also known as treacle in English, any type of syrup works) • 1 teaspoon of salt • 10-12dl bread flour Here's how you can create them: • Melt the butter completely over low heat and remove from cooking surface. • Combine milk, check its temperature to see if it reaches body temperature (around 98.6 degrees Fahrenheit) - a wet but not warm sensation on the skin • Pour the mixture into a large bowl. • Add yeast only when temperature reaches 37°C, then whisk until fully incorporated with butter and milk • Stir well after adding sugar and salt • Slowly add flour to dough as you mix using an electric mixer or bread maker ( approximately 10dl of flour at a time works perfectly) • After the dough becomes manageable, cover bowl with plastic wrap and let it ferment for about 15 minutes • Remove from oven, lightly dust work surface and divide into two equal pieces. Roll out each to roughly 0.6 inches in thickness using rolling pin. • Cut into shapes with circular tool; keep leftover scraps together and create a new ball of dough then flatten again • Transfer them to a baking tray lined with greaseproof paper, cover with clean towel and allow another 5-10 minutes to ferment • Get your oven hot at around 425 degrees Fahrenheit (hot like when opening a boiling kettle). Take out each piece from the metal plate and set on top using pointed instrument then gently put onto the prepared tray • After about six minutes of baking, carefully transfer to cooling rack for optimal results!
