I use a simple door latch on my home-made cold smoker that's easy to assemble. Since it's straightforward, I won't provide a diagram, but you can refer to the one created using OpenSCAD. To start, drill a 16mm hole in your door and then secure the trim with the trim nut. The bolt works best when held in place by a washer and two small nuts locked together, but feel free to adjust according to your available space - if needed, glue one of the nuts (in my case, just one nut worked fine). Finally, fasten the latch on using a small nut on either side.
