The doner is born from Turkish ingenuity, typically featuring lamb, but by no means limited to it, as layers of seasoned meat are stacked into a cone shape and cooked slowly on a vertical rotisserie. As the outer layers reach perfect doneness, they're shaved off with precision and served within a pita or other flatbread alongside fresh vegetables and a tangy sauce.
