Lettuce (Lactuca sativa), either annual or biennial, grows from 12-33 centimeters tall and is native to Mediterranean regions. It thrives in open land with full sun or half shade, preferably in fresh, rich, well-drained soil. As a warm, temperate plant, lettuce is cold-resistant and has been cultivated as food for over 4500 years in the Mediterranean basin. The name 'Lactuca' derives from Latin lactis (milk), alluding to its milky white sap that was known to have opiate-like properties used by Romans and Egyptians as a sleep aid after meals. Lettuce is also rich in minerals, and some pigmented varieties contain antioxidants. Although important in Europe, lettuce production in the USA is relatively minor, with around 78,000 acres grown annually in California.
