Candy crystals or spun sugar - a popular confectionery item, sweetness evoking memories of fluffy cotton wool (from which it derives its name). Prepared from melted sugar, this delicacy is poured through a sieve onto a chilled metal drum spinning rapidly or cone shape. During production, fine fibers are created, accumulating in a single mass. Adding colored food dyes to the sugar syrup can transform the sugary candy into an attractive shade.
