Chickens flowing through the cooling tunnel at a rate of 12,000 per hour weigh in at exactly two and a half kilograms each. As they enter this specialized system, their initial body heat registers at a scorching forty degrees Celsius. To rapidly lower their temperature, the chickens are submerged in cold water tanks located within the first section of the tunnel. Following this initial cooling phase, they are then transferred to subsequent sections where forced air circulation takes over to complete the chilling process. After approximately two and a half hours of treatment, the now-cooled chickens emerge with a core temperature reading of precisely two degrees Celsius.
