In this hot chocolate production process, a closed loop system with a lobe pump aerates and deodorizes the chocolate. The stainless steel 316 pump has a heating jacket and is powered by a 5 HP helical worm gear motor, delivering up to 18 Liters per 100 rotations at speeds between 70-150 rpm. Jacketed pipes maintain the liquid chocolate temperature at 50 degrees Celsius. A Coriolis mass meter measures the chocolate's density. Once ready for production, a three-way valve directs the flow away from the 10,000 kg capacity couche tanks, which were custom designed by us and featured in a large chocolate factory.
