Create a sketch from a reference image using Onshape by first opening the desired part studio and selecting the 'Sketch' feature. Next, choose the plane on which you want your sketch to reside. Then, click on the 'Import Image' button and select the image file you wish to use as a reference. Adjust the imported image's scale and position, and start sketching on top of it by clicking on specific points or drawing lines and arcs. Don't forget to save your changes regularly.
