Bread Roll Cutter - Kaiser Roll

Just liked the shape of the rolls and couldn't find a deep enough cutter among the stls available so I decided to design my own. I also didn't add a handle, the less corners and complicated shapes the better, it makes the cleaning easier. 3D Printing: No supports needed and just print in a colour you like. Recipe: For 14-15 rolls Fan Oven 220C/18-22Min. 1000g Strong Flour 550mg Cold Water 30g Fresh Yeast ( or 10g dried yeast) 30g Butter 20g Salt Seeds of your choice - Mix all ingredients and kneed for 10 minutes until the dough is smooth. - Portion the dough into 70g - 80g pieces. Roll the pieces into small balls (Pic1), cover and let it proof for 30 minutes. - Dust with cornflour ( Pic2+3 this will prevent the cut dough from sticking together again) and push the roll cutter into the dough balls, but not all the way ,just short of it (Pic4-6). - Remove the surplus cornflour from the dough balls with a little brush (Pic8). - At this point the cutter is no longer needed and can be easily rinsed clean (Pic9). - Wet a piece of kitchen paper, place it into a small bowl and gently place a roll onto it with the top side down (Pic10). This will pickup moisture and acts like a glue to stick the seeds to it. - Then place the cut dough balls, top and moist surface facing down into a bowl of seeds (Pic11-13 any seeds you like, I used sesame and poppy seeds, or just skip this step). - Now place the seeded (or not) dough onto a baking tray with seeds /cut side downwards (Pic14). - Let it proof for another 45 - 60 minutes before turning them over, surface with seed facing up (Pic15). - Spray the dough surface with a little water before baking (Pic16). - Ensure you have some water in the oven in a little ovenproof dish to create steam for the first 10 minutes baking (Pic17), this will help the dough to rise. - Place the baking sheet quickly into the oven for 18 to 22 minutes. - Enjoy!
