The Behmor Brewer boasts a fantastic carafe, but its design flaw is exposed when it's removed from the coffeemaker - it creates a thermosyphon that circulates air in the carafe, cooling down the coffee far too quickly. I discovered this by leaving it in the coffee maker, where the coffee remained hot for 4+ hours, and on the table, it turned cold within an hour. So, that's why I use the plug. It simply drops in and blocks the airflow out of the center of the carafe, keeping your coffee hot just like it was meant to be.
