Lautering is an essential step in brewing, as it separates the wort from grains; this liquid contains sugar extracted during mashing. In 2010, I oversaw construction and commissioning of a beer production facility in Lebanon, which now distributes its products throughout Lebanon and Europe. A standout feature of my design is an innovative mechanism that efficiently empties the mash from a tank by counter-rotating fins with opening flaps on the sides. The factory boasts a daily capacity of 18,000 liters, and the first batch produced yielded a truly delicious beer after fermenting for several weeks.
